Hungryman Breakfast
Hungryman Breakfast (serves six)
This is a one pot recipe that is warm and filling for cold weather.
Ingredients
- 1 lb precooked sausage "crumbles" or precooked sausage patties
- 1 dozen eggs
- 2 lb diced frozen hash brown potatoes
- 1 lb shredded cheddar cheese
- 3 tbsp vegetable oil
- salt and pepper
Directions
- In a large high-sided pot, heat the oil on medium-low heat, and cook the potatoes according to the directions (cover the pot to shorten cooking time and to retain moisture).
- Season with salt and pepper. Turn potatoes and season again. Lower the heat to low.
- In a skillet, cook the sausage (if not precooked).
- While the other items are cooking, beat the eggs in a separate bowl or pot.
- Dice the sausage patties (if not using "crumbles").
- Layer the sausage over the potatoes in the pot.
- Pour the eggs evenly over the potatoes and sausage; it will sink down into the other items.
- Cover and cook on medium-low until the eggs firm up.
- Layer the cheese evenly on top and recover for several minutes, until the cheese melts.
- Carve out deep spoonfuls with a serving spoon or spatula, to get some of all the layers in each portion
