Chicken Corn Chowder

Chicken Corn Chowder (serves four)
This is a crock pot recipe that we modified to cook on a camp stove in 20 minutes

Ingredients

  • 1 lb chicken, cubed (two 9oz precooked chicken packages)
  • 3 cups chicken broth (3/4 of a 32oz carton)
  • 3 10-3/4 oz cans of cream of potato soup
  • 1/2 lb home fries potatoes (optional)
  • 1 11 oz can corn with peppers
  • 1 4 oz can green chili peppers, chopped
  • 8 oz sour cream
  • 4 oz Velveeta cheese with peppers (or regular)
  • 1/2 lb cubed hash brown potatoes
  • 1 package taco seasoning
  • 2 tbsp cilantro
  • 3 tbsp vegetable oil

Directions

  1. Brown potatoes in oil.
  2. Brown chicken (if not precooked).
  3. Add all ingredients except sour cream and Velveeta cheese to large pot.
  4. Bring to medium heat and return to a simmer for 15 minutes.
  5. Cut the Velveeta into 1/2 inch cubes and add to pot; stir in to melt the cheese.
  6. Add the sour cream and stir in.
